Easy and Healthy Pantry Salad
Ingredients:
- Greens: Lettuce, spinach, or any mixed greens you have
- Protein: Canned chickpeas, black beans, or cooked lentils
- Veggies: Cherry tomatoes, cucumbers, or bell peppers
- Add-Ins: Nuts (like almonds or walnuts), seeds (like sunflower or pumpkin seeds), or dried fruit (like cranberries or raisins)
- Dressing: Olive oil, lemon juice or vinegar, salt, and pepper
Instructions:
Prepare the Greens:
- Rinse and chop your greens into bite-sized pieces. Place them in a large salad bowl.
Add Protein:
- Rinse and drain the canned chickpeas or beans. If you’re using lentils, make sure they’re cooked and cooled. Add them to the greens.
Add Veggies:
- Chop your veggies into small pieces and add them to the bowl. Cherry tomatoes can be halved, cucumbers can be sliced, and bell peppers can be diced.
Incorporate Add-Ins:
- Sprinkle some nuts, seeds, or dried fruit over the salad for extra texture and flavor.
Prepare the Dressing:
- In a small bowl, whisk together 2 tablespoons of olive oil, 1 tablespoon of lemon juice or vinegar, and salt and pepper to taste. Adjust to your preference.
Toss and Serve:
- Drizzle the dressing over the salad and toss everything together until well combined. Serve immediately.
